Sweet Chilli and Pork Sausage Rolls
2 tspns vegetable oil 1 onion grated 1 carrot peeled & grated 1 zucchini,grated 500g pork mince 3/4 cup sweet chilli sauce 1 cup fresh breadcrumbs 1 egg salt & pepper 4 puff pastry sheets,halved extra sweet chilli sauce to serve
Heat the oil in a frypan, add the onion, carrot & zucchini & cook for 5 mins until golden. Cool. Put the mince, sweet chilli sauce,breadcrumbs, beaten egg, vegetable mix,salt & pepper & mix well. Place a cup of mix along the middle of each pastry half & roll to enclose with the seam at the bottom.Place on baking tray lined with non stick baking paper.Bake for 30-35 mins until golden brown & cooked through.Cut into pieces & serve with extra chilli sauce.

I wanted some healthy food for a kids party & these went down a treat, not only with the kids but the adults loved them as well.
