Lemon and Herb Snapper
Ingredients
2 snapper fillets 2 lemons juiced 6 garlic cloves, crushed Handful parsley Handful basil Extra virgin oil Salt and pepper
Method
In mortar and pestal pound garlic and salt and pepper. Add chopped herbs, oil and lemon juice and pound to a paste. Smear paste over fillets. Marinade in fridge a few hours. Then cook on barbecue.
