BBQd potato planks with rosemary and seasalt

Ingredients

1 Large potato per person Olive oil to splash around Spriggs of fresh rosemary, chopped (preferably cut from the bush in the back yard) Good sprinkling of seas salt.

Method

Peel the potatoes and cut into thick planks Cook in the microwave until just tender Allow to cool Pour over olive oil. Sprinkle on sea salt and rosemary Cook on the BBQ plate until crispy on the outside

Story behind this recipe

My father cooks thinning sliced raw potato on the BBQ but it always turns out fatty, and some slices are cooked while others are still crunchy. I don't remeber what gave me this idea in the first place but I used to do the potatoes on the fry pan with a piece of fish for a healthy, home made version of fish n chips. (They turn out better on the BBQ though).
