BBQ Pancake
Ingredients
Pancake mix (or make batter yourself) 4-5 rashers bacon 4-5 spring onions 150 g cheese (good stuff like aged cheddar or havarti) maple syrup or maple flavour syrup

Method
Heat flat plate on BBQ. Chop bacon rashers and spring onions, grate cheese. Pour all of your batter on the hot plate to make one giant pancake. Sprinkle bacon, spring onions, cheese and caramelised onion on the pancake. Wait until pancake forms bubbles that burst but do not fill in. Drizzle syrup over all of it and roll up. Transfer to plate or cutting board and slice into pinwheel portions. Drizzle a bit more syrup on it and enjoy!
Story behind this recipe
It was a recipe I adapted from Canada. We used to make it on the BBQ in the middle of winter to get that 'summer' flavour!
