Huey's Plum Barbequed Wings
12 chicken wings
4 spring (green) onions, finely chopped
2 small red chillies, finely chopped
1 cup white wine vinegar
freshly ground salt & pepper
Huey’s Asian Plum Sauce
Soak 12 wooden skewers in cold water for an hour. Then put them through the chicken wings lengthways.
To make the mopping sauce, whisk up the spring onions, chillies, vinegar and seasonings. Set aside.
Place the skewers on a preheated oiled BBQ crossways and slip kitchen foil underneath the sticks (not the chicken). Cook for about 15 mins, continually brushing with the mopping sauce and basting with the Plum Sauce after about 12 mins.
Serve with a bowl of Plum Sauce on the side.
