I want to use my Weber as a smoker and do beef ribs. How can I smoke and marinate them Aussie style? Everything on the net is American :(

It would be amiss of me not to tell you to use Beerenbergs Sticky Rib Marinade.... its fantastic..... and available in your nearest Woolworths and Independant Supermarkets (Blatent plug I know, but they pay me!)
As for the Smoking part.... go to a Wood Yard and buy some good old RED GUM..... use this for smoking instead of the normally suggested Hickory.... Why is it that we are always guided down the American path ?.... They dont do everything right!
WIth the Weber, i would use the indirect method of heating, keep it cool, and baste the ribs so they don't dry out, and cook long and slow......

I would be looking towards untreated, Australian Native wood chips (in your smoker box for an authentic, aromatic Aussie flavour - look on the net and remember to wet them, plus substitute an Aussie rum or good Aussie beer in place of Bourbons in your marinades.
